1.0 lb
smoked turkey sausage, sliced about 1/2 inch in thickness
Black Pepper
⚠️ Sliced green onions and rice for serving
Instructions
1.Rinse the beans under cool, running water. Place them in a large bowl or pot and cover with several inches of water. Let sit overnight. Drain the beans and add them into the slow cooker.
2.In a large skillet sauté the onions and celery for several minutes. Add in the garlic, smoked paprika, sage and cayenne pepper. Season with salt and pepper and sauté another 30 seconds. Pour the mixture into the slow cooker.
3.Add the remaining ingredients minus the sausage to the slow cooker, stir everything together, cover with the lid and cook for 8-10 hours on low or until the beans are tender. Use a potato masher and mash some of the beans. This will help thicken the sauce for a creamier consistency.
4.Stir in the slices of sausage and cook for another 15-30 minutes. At this point you can either serve it or cool and refrigerate it overnight. Serve over rice topped with sliced green onions.
